Polenta with TVP Tomato Sauce

Ingredients:
1 cup cornmeal, preferably coarse
3 cups water
Leftover TVP Tomato Sauce
1/2 cup grated cheese
Directions:
Boil the water in a medium saucepan. When boiling hard, begin stirring, clockwise. Add the cornmeal as you stir, in a thin stream. (This prevents sticking). Cover and reduce heat to very low. Stir occasionally until the cornmeal mush is quite thick (5-10 minutes). Spray a glass pie pan with oil. Pour the cornmeal mush (or polenta) into the pie pan and press it down. Pour TVP Tomato Sauce over the polenta (do not overfill past the rim of the pie pan). Sprinkle some cheese, if desired, over the top. Broil (or bake) until the sauce is bubbly and the cheese is melted (about 30 seconds in the broiler, about 10 minutes at 400 degrees in the oven).
Serves four. Serve with green salad and rolls, if desired.
